Not fish but game. Last night I fried up some fresh venison.
Yeah, fried!
I breaded small discs of tenderloin (1/4"thick) in Uncle Bucks fish breading and fried them in a small amount of coconut oil. (Doesn't matter much what kind of oil.)
Be careful cooking because it gets tough if it is over cooked.
Tossed salad, Baked Potato and venison. Yum!

When I was growing up, my absolute favorite food was fried venison backstrap. It was prepared very similar to your method. Sliced thin. A little garlic salt, black pepper, and flour. Then fried in LARD!!! The lard really made a big difference. Probably not the healthiest way to cook it, but it sure was good.
