smoke it and make fish dip out of it. Not so tasty on the grill in my opinion.

some where in here there is a way to make trout with Bacon that will work with this one to , also smoke it , is not a bad idea , but in flake it up and use it in a nice salad , with some balsamic and feta chesse , is great , it make the wife happy to she think you became healthy :)

I prefer to cut it into small chunks and fry it. Use cornmeal and ground pepper or one of the boxed mixes like Zatterans.

The Fort McAllister Sportfishing Club in has a winning recipe for king.
We have one 1st 5 times 2nd 2 times at the seafood festival for 7 years against pretty good competition.
Here it goes.
ingredients for Kingfish Kabobs
Kingfish chunks
bacon
pineapple.
Place on skewer's alternate King,Bacon Pineapple,King,bacon .....
Marinade in half Italian dressing and half pineapple juice 24hours
put on grill and marinade with kraft honey mustard sauce cook 4 minutes then turn 1/4 repeat 4 times and serve it is the best.

Ok I tried a recipe last night that was wonderful. I marinated the King in Italian dressing and balsamic vineger all night. Heated up the grill very hot. I used a fish basket and put down a layer of bacon, covered it with the Kingfish and some spices, then another layer of bacon and then to the grill. 3-5 minutes then turn it over, I used the left over marinade to baste the fish as it cooked. Bacon was crisp and smoked like heck but the fish was well cooked and totally delicious. NO strong fish taste at all
