That's exactly how I prepare flounder my favorite way, except I cut my cross cuts perpendicular to the center of the spine to ease in the removal if the meat. I prefer the 13-16inch flounder to a filet off a larger one now since I've eaten plenty of both. There is something about the flavor when it's cooked bone in.
