Any of you chef types have a good recipe for steamed or poached trout, redfish? I did some improvising on luch today and it was OK, but I figure there are some better combinations out there than what I came up with.

if you are using a steamer try this... place green onion stalks garlic slices fresh mushrooms in as a bed ...lay the filet on top and steam until just done. two of the bigest mistakes with fish is over cooking and too much spices.

1 tbs crushed ginger 1tbs crushed lemon grass [both sold in tubes in the produce section] 2 oz mirin 1tbs soy for marrinade 4 cups chicken stock [i prefer college inn brand ] 3 carots cut into sticks 1 cucumber cored and cut into sticks / baby spinach leaves and bean sprouts for garnish, angel hair pasta. marrinate fish [also good to use as a marinade for broiled fish] heat stock add carrots then fish and marinade to pot then add cucumber cook noddles seperately . ladel over noodles and top with chopped spinach and bean sprouts
