Enjoy this video on how to fillet a redfish. You will notice he left the skin/scales on. You then toss it on the grill and cook until done. When cooked, the meat will slide off the burnt skin and be ready to serve.

Thanks for posting that. I have never dressed a Redfish. I will this spring though, hopefully.

IS2K1....You might want to put that post on the "RECIPE FORUM" since there are 2 posts and pix on there that show how to cook "Redfish on the Half Shell"......been there for quite awhile!!

Dreads posted his recipe for it earlier this year, and CooKnFish posted the original one with pix exactly three years ago TODAY....Jan. 1, 2008!!

Thx for the video tho on filleting them....JohnYaksJax

PS: Never saw anyone "tear" the fillets off a fish, and he finally cut the second one, but it appears that he has done it once or twice....

I tried that on an upper slot this weekend and it works pretty slick tearing the filet from the ribs. Then did the half shell cooking. Lost of meat in that rib section that you'd toss in a normal filet process.
