I figured I would share this with you, I was experimenting one day and the family liked it so maybe you will as well!

1 Pound of a Fillet of fish (snapper, flounder, red fish etc)
Season both sides of fish with the following:
Salt
Pepper
Thyme
Red Pepper
Lemon Juice (from a fresh squeezed lemon of course)

---------------------------------------------------------------
Chop up 1 - 1-1/2 Red Onion
Chop up 1 Red Tomato
Chop up 1/2 bell pepper
Smash 2-3 cloves of garlic

Melt butter in a saute pan then add the chopped up veggies and garlic.
Add a little bit of white wine
When the onions are almost cooked
Add the fillets of fish and sear them on both sides.

After they are just seared place everything in a pan to put in the oven. Bake at 350-375 for 10-20 minutes depending on the thickness of the fish and how much you are making.
