I like to incorporate my vegies into my dishes so that I make sure that I eat them. :-) Plus I love good mexican food so I made this with the last flounder that I caught.

Fish Ingredients -
4 flounder filets
1 cup flour
1 tsp cumin
1 tsp garlic powder
.5 tsp salt

Combine dry ingredients together and coat fillets with powder

Add filets to pan on medium heat that is coated with a 50/50 mix of olive oil and and melted butter

Salsa

2 Tbls lime juice
1 small chopped tomato
3 Tbls fine chopped red onion
1 Tbls fine chopped cilantro
couple dashes of Tapatio or Chalula hot sauce

Mix all the salsa ingredients together in a bowl and set aside

Thinly slice half of an avocado.
Plate the fish and place even amounts of salsa on the filets. Then place the avocado slices right on top.

Serve with rice of your choice or roasted garlic red potatoes and enjoy with a Pinot Grigio or Chardonnay.
