1/2 cup franks redhot hot sauce (or louisiana hot sauce)
1/4 cup packed brown sugar
1 teaspoon dried thyme leaves
1/2 teaspoon ground allspice
1 teaspon cayenne pepper (only if you like food really spicey)
2 tbs olive oil
2 redfish fillets
grilled pineapple chutney (recipe follows)
1. whisk hot sauce, suger, thyme, allspice, and cayenne pepper

. Reserve 3 tbs for chutney.
2. mix oil into hot sauce mixture; thoroughly baste fish.
3. Place fish on a well greased grill. Cook, covered, over meduim-high heat for 10 to 15 min turning once until it flakes easily with a fork. baste fish with sauce about every 5 min and after turning. top with grilled pineapple chutney and enjoy!!!!
Grilled Pineapple chutney
1/2 a fresh pineapple peeled and sliced 1/2 inch thick
1 orange bell pepper, cut into quarters
2 tbs minced red onion
1 tbs minced candied ginger
1 tbs minced cilantro
grill pineapple and bell pepper about 10 min over med heat until lightly charred and tender. coarsely chop and place in bowl. Add reserved 3 tbs of hot sauce mixture, onion, ginger, and cilantro. Toss to combine.
