I had some of this weekend before last, and it is just the best! And it is easy to make.. This recipe is from one of my oldest best friends who used to live on Dunbar Creek on St Simons, and we harvested many a trap full of crabs out of there. She can make some crab dishes!

DUNBAR CREEK CRAB SOUP

2 T. minced onion

2 T. minced celery

2 T. butter

2 T. flour

1 can cream of potato soup

1 qt. whole milk - divided

dash nutmeg

2 c. crab meat

Saute onion and celery in butter and add flour to make a roux. Stir constantly for a few minutes.

Add soup and half of the milk.

Stir over medium heat until it's bubbly and beginning to thicken.

Add crab meat - the more the better - and stir gently.

Add remainder of milk and allow to simmer for 20 minutes or so.

Season with small amount of nutmeg. Add few grains of red pepper if desired. Taste carefully and gradually add pepper and salt. Be real careful with the salt.

If soup is not as thick as you want, make another butter/flour roux and stir until it bubbles.

Note: This recipe feeds six as an appetizer. You can stretch it by using another pint of milk, but it won't be as good. Better to bite the bullet and buy enough crab to double the entire recipe.

Enjoy!

(We always ended up putting a little hot sauce in our bowls to spice it up a bit, so a little more red pepper might be a good thing while cooking.)
